Traditional poffertjes plates are covered in small rounded moulds, so a full batch cooks in front of the crowd at once. Watching them being turned one by one gives the service a rhythm that is genuinely satisfying to stand and watch.
That visual process makes poffertjes especially effective where food also needs to create dwell time, footfall or conversation.

Depending on the setup, poffertjes can be served at around 200–600 portions per hour. We match final throughput to the number of cooking plates, staffing, menu and service window.

What are poffertjes?
Poffertjes are traditional Dutch mini pancakes made with yeast and buckwheat flour, giving them a light, spongy texture. They are cooked in special pans with rounded indentations.
What is the traditional topping?
The classic Dutch serving is butter with a generous dusting of icing sugar, although Crazy & Co. also offers fruit, cream, chocolate and savoury directions.
How many are in a portion?
The current Crazy & Co. page says portions can be adjusted to suit the event, with four or five often working well for particularly busy service.
How quickly can you serve them?
Aapproximately 200–600 portions per hour depending on the setup. Final capacity depends on cooking equipment, staffing, topping choices and the service window.
